Recipe: Garlic Scape Pesto

Garlic scapes are the stalks of the garlic plant that grow before the seeds and bulb form. This pesto is wonderful on bread, sandwiches, pasta, focaccia or meats like chicken and fish.


  • 1 lb garlic scapes
  • 1 cup grated parmesan cheese
  • ½ to 1 cup olive oil
  • 2 Tbsp lemon juice (optional)
  • ½ cup walnuts (optional)


Chop the garlic scapes into three-inch lengths. Puree in food processor until smooth. Add parmesan cheese and walnuts; process until smooth. Add lemon juice, and then slowly add the olive oil as the food processor runs; continue until all the oil is combined into the mixture. Can be frozen or stored refrigerated in an airtight jar for up to two weeks.
