Drink Recipe: Piña Colada in the MORNING?!

YES!

Our good friend Leah Dillon Personal Training and Wellness has set forth a personal 100 day challenge that started yesterday. The goal is to do 100 days of… something, anything that is a bit a of a challenge for you to do. 100 days takes us right to New Year’s Eve, which if completed, leaves us with one less resolution for 2013. Here’s my accountability for this morning: 6am gym, and this yummy kale-filled piña colada juice!

The recipe is as follows, everything to personal taste.

INGREDIENTS:

  • kale
  • coconut water (I got mine straight out of the coconut)
  • honey crisp apple
  • pineapple chunks

PREPARATION:

Juice the kale and apple. Pour the juice into a blender and blend smooth with a 1/4 cup of coconut water and pineapple. Enjoy!

PS – I drank 2/3 of this juice/smoothie blend before I realized I should take a photo and share it with all of you! Do you have a favorite juice/smoothie recipe? Comment below!

  1. Love Coconut water, drank two jugs of it this week! The Pineapple, Apple (and Kale of course) make it extra Nutritious! Did you try to throw it all in the Vita Mix so you get the fiber too?

  2. Hi Sondra, thanks for the kind words. I really appreciate it. Initially I wanted to do a juice but I always have trouble juicing pineapple (even with my Green Star). I juiced the kale and apple, but threw that juice into the Vitamix with the pineapple and coconut water. So in the Vitamix it went 🙂 I would have added banana, but I’m allergic 😦
