Recipe: Date Candy Balls

Gluten-Free, Vegan
YIELDS: 10 to 15 pieces

Dates are very sweet so these bite-sized gluten-free, vegan treats are as satisfying as cookies.

INGREDIENTS:

  • 8 oz pack of chopped dates
  • 2 Tbsp of water
  • 1/2 tsp vanilla
  • organic coconut flakes (to taste)
  • small cupcake holders

PREPARATION:

Place water and dates in small sauce pan and bring to boil. Stir and cook until completely smooth or very soft. Add vanilla and stir well. Remove the mixture from the heat. As mixture is cooling, take teaspoonfuls and form into ball or oval shapes; then roll in coconut. Serve in mini-cupcake holders.
