Fish Kabobs

Vegetarian, Gluten-free, Dairy-free, Nut-free, Main course
YIELDS: 3 servings

INGREDIENTS:

  • 1 lb fish steak, cut into 1 1/2 in wedges
  • 1 onion, cut into 1 1/2 in wedges
  • 1 green pepper, cut into 1 1/2 in pieces
  • 1 cup fresh pineapple chunks
  • 2 fresh peaches
  • 2 tsp apple cider vinegar
  • 1 Tbsp honey

PREPARATION:

Blend together peaches, vinegar and honey. Marinate fish, onion and peppers in peach mixture for 1 hour. Thread items onto skewers, alternating fish, pepper, onion and pineapple. Grill for about 15 minutes, turning frequently (do not overcook, as charring causes formation of carcinogenic compounds).
