Robin’s version of the World’s Easiest, Healthiest Cookie!

YIELDS: 6-7 cookies

INGREDIENTS:

  • 1 cup rolled oats or quick oats
  • 2 very ripe bananas
  • ¼ cup raisins or Craisins (optional)
  • ¼ cup dark chocolate chips (optional)
  • Pinch of salt, nutmeg and cinnamon (optional)

PREPARATION:Preheat oven to 350 degrees. Spray cookie sheet with non-stick spray. Mash banana, oats and raisins together with hands. Mix in chocolate chips, salt, nutmeg and/or cinnamon, if desired. Form into 6 to 7 balls, and press out flat on cookie sheet to form round cookies, about 1 inch apart. Bake in oven for 15 minutes. Remove from cookie sheet and let cool on a plate for 2 minutes before eating. Store leftovers in the refrigerator.
