Recipe: Gluten-free Corn Muffins

Vegetarian, Gluten-free, Nut-free
YIELDS: 12

INGREDIENTS:

  • 1 cup corn meal
  • 1 cup rice flour
  • 1 Tbsp baking powder
  • 3 Tbsp organic raw sugar
  • 1 tsp salt
  • 2 organic eggs, beaten
  • 2 Tbsp safflower oil
  • 1 cup rice milk

PREPARATION:

Sift together corn meal, rice flour, baking powder and salt. Mix. Add sugar and beaten eggs, rice milk and oil. Mix together well. Allow mixture to sit for 5 minutes while you preheat oven to 350 degrees. Pour batter into muffin pan. Bake for 20 minutes or until toothpick inserted into center of muffin comes out clean.
