YIELDS: 6-7 cookies
INGREDIENTS:
- 1 cup rolled oats or quick oats
- 2 very ripe bananas
- ¼ cup raisins or Craisins (optional)
- ¼ cup dark chocolate chips (optional)
- Pinch of salt, nutmeg and cinnamon (optional)
PREPARATION:Preheat oven to 350 degrees. Spray cookie sheet with non-stick spray. Mash banana, oats and raisins together with hands. Mix in chocolate chips, salt, nutmeg and/or cinnamon, if desired. Form into 6 to 7 balls, and press out flat on cookie sheet to form round cookies, about 1 inch apart. Bake in oven for 15 minutes. Remove from cookie sheet and let cool on a plate for 2 minutes before eating. Store leftovers in the refrigerator.
