Jett's Bloody Good Tomato Soup
YIELDS: 4 servings
INGREDIENTS:- 3-4 pounds tomatoes
- 1 medium sweet onion
- ½ bell pepper
- 1-2 stalks celery
- 1 medium carrot
- 1 tsp butter
- Salt and pepper, to taste
Core the tomatoes. Place tomatoes with skin in blender. Puree until smooth. Finely dice onion, bell pepper, celery and carrot. Combine all ingredients in a pot. Stir and bring contents to a rolling boil. Turn down heat and simmer for 1 hour, stirring occasionally.
