Recipe: Spicy Sweet Potato Hash
Gluten-free, Dairy-free, Nut-free YIELDS: 5 servings
INGREDIENTS:- 2 large sweet potatoes, chopped
- 8 slices nitrate-free bacon
- 1 medium yellow onion, chopped
- 1 tsp Old Bay seasoning
- ½ tsp cayenne pepper
- 1 tsp dried basil
- 1 tsp garlic powder
- Sea salt and pepper, to taste
Dice sweet potatoes into very small cubes (no bigger than ½-inch pieces) and place in heat-safe bowl. (They can also be shredded in a food processor.)
Chop onions finely. Set aside. Cook bacon in a large pan over medium heat, until crisp. Set bacon aside, but save drippings in the pan. Place chopped onions in the bacon drippings in the pan and cook over medium heat. Add all seasonings, stirring while cooking for 3 to 4 minutes.
Add potatoes and raise heat to medium-high. Cook until potatoes are soft and browned slightly. Add any additional salt and pepper or spice to taste. When done cooking, break bacon into bits and add to potatoes. Mix well and enjoy.
