Recipe: Banana Oat Bran Muffins

Vegetarian, Vegan, Dairy-free
YIELDS: 12 muffins

INGREDIENTS:

  • 1 ½ cup oat bran
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • 2 Tbsp Sucanat (dried cane juice)
  • 1 Tbsp lemon juice
  • 1 small organic apple, peeled, cored and grated
  • 3 speckled bananas
  • ¼ cup chopped walnuts
  • 2 Tbsp organic raisins
  • cup water
  • Organic coconut oil spray

PREPARATION:

Preheat oven to 375 degrees.

Stir together oat bran, baking powder, salt and Sucanat in a large bowl. Set aside.

In another bowl, mash bananas. Add lemon juice, apple, walnuts, raisins and water.

Combine wet and dry ingredients well.

Spray muffin tins with coconut oil spray, then spoon batter into tins, being careful not to overfill.

Bake for 30 minutes. Remove from tins and place on rack to cool.
